Glutinous Rice Flour (Cooked) - Glutinous Rice Flour 50g 2. Mochi Base A1 - Glutinous Rice Flour 50gm A1 - Corn Flour 15gm A1 - Super Fine Sugar 25gm A1 - Full Cream Milk 85gm A2 - Butter 10gm A3 - Glutinous Rice Flour 50gm 3. Oreo Cream (Filling) Rich's Gold Label Topping 250gm Oreo Crumbs 150gm 4. Makeup Mochi Dough (Small) 4nos Oreo Cream (Filling) 120gm ---------------------------------------------------------------- ▶Procedure 1. Whip Gold Label until soft peak then add in Orea crumbs and mix well 2. Pan-fried Glutinous Rice Flour until cooked, then set aside before needed 3. Add Glutinous Rice Flour, Corn Flour, Super Fine Sugar, Full Cream Milk in a mixing bowl and mix well 4. Cover with plastic wrap and make some hole on the cover then steam 20-25mins 5. Add butter into the dough and mix until the butter completely melts 6. Put some cooked glutinous rice flour on kneading board 7. Take some mochi dough and cut into a small dough then roll the dough with a rolling pin 8. The layers are fluffy, moist, creamy, and studded with sweet prunes. Let's whip! ▶ Ingredients 👉🏻 Cake batter Sugar - 80g Butter - 160g Baking Soda - 5g Vinegar - 5g Eggs - 350g Sugar - 245g Low Protein Flour - 325g 👉🏻 Bettercreme Filling Rich's Bettercreme (whipped) - 500g Prune - 100g ---------------------------------------------------------------- ▶Procedure 👉🏻 Cake batter 1.Heat up sugar and butter until brown then add in butter and mix well. Leave aside. 2.Combine baking soda and vinegar. 3.Whisk eggs and sugar until 50% and gradually add in baking soda and vinegar mixture and continue to whisk until fluffy, then fold in Low Protein Flour, lastly pour in sugar and butter mixture and stir till well combined. Leave to rest for 30 mins. 4.Baking Temp: 170˚C Top Heat and 170˚C Bottom Heat. 5.Baking Time: 8 mins. 👉🏻 Bettercreme Filling 1.Whip Rich's Bettercreme until 80% firm peak. 2.Spread the crème on the cake, 3 layers of cream, 4 layers of cake and sprinkle each layer with chopped prune. Lastly, coat the cake with cream and cover with cake crumbs. Enjoy Baking. Egg White - 180g 5. Sugar - 40g 6. Low Protein Flour (sieved) - 60g 7. Corn Starch (sieved) - 60g 8. Butter (warm 50°C) - 30g 👉🏻 Raspberry Sauce Raspberry Puree - 120g Pectin - 2g Sugar - 75g Fresh Strawberry (cut cube) - 140g Gelatin (dissolved in 20g water) - 4g 👉🏻Make Up Décor Baked Vanilla Sponge - 1pc Raspberry Sauce - 100g Rich's Bettercreme (whipped to soft peak) - 200g ---------------------------------------------------------------- ▶Procedure 👉🏻Vanilla chiffon sponge 1. Slightly whisk egg yolk, whole eggs and sugar until fluffy. 2. Whip egg whites and sugar until 70% stiff and gradually fold into egg yolk mixture until combined. 3. Fold Flour and Corn Starch into the batter. 4. Add in butter and mix until combined. 5. Spread Batter onto a 60x40cm baking tray 6. Bake at : Top: 180C/ Bottom: 140C for 15min. 👉🏻Raspberry Sauce 1. Cook Raspberry Puree to 70C. 2. Add in Pectin and Sugar. 3. Continue to cook for 3 mins. 4. Add in Fresh Strawberries and cook for another 2 mins. 5. Add in Bloomed gelatin into the mixture. 6. Therefore, we learned and recreated banana leaf meal with Sugu Pavithra’s Kari Ayam😍 We definitely love it a lot❤️ Let's Cook! ▶ Ingredients Garlic Ginger Paste 1. Ginger - 80g 2. Garlic - 80g Curry Chicken 1. Whole Chicken ( Chopped into 20-24pcs) Dry Spices 1. Green Cardamom - 4-5 pcs 2. Star Anise - 3-4 pcs 3. Cinnamon Stick - 3-4 sticks Condiments 1. Garlic Ginger Paste - 45g 2. Red Onion (cloves) - 2 nos 3. Tomato (slices) - 2nos 4. Potato (cubes) - 6 nos 5. Curry Leaf - 3 stalks 6. Pandan Leaf - 3pcs 7. Rich's Double Cream - 200g 8. Water - 200g Spices Powder 1. Curry Powder - 60g 2. Chilli Powder - 45g 3. Turmeric Powder - 30g 4. Coriander Powder - 45g 5. Sweet Cumin Powder - 45g Seasoning Salt - As needed ---------------------------------------------------------------- ▶Procedure 1. Peel the skin of ginger and garlic, then use the food processer blend it until mush. 2. Stir fry green cardamom, star anise, cinnamon stick, red onions, curry leaf, pandan leaf, and garlic ginger paste with cooking oil and stir fry garlic ginger paste until golden brown. 3. Add in Whole Chicken ( Chopped into 20-24pcs) then stir fry the chickens until golden brown. 4. Cover the pot and cook 15-20mins. 5. Add in tomatoes and potatoes, then stir well and cover the pot and cook 10-15mins. 6. Add in all spices powder then stir well. 7. Once it starts boiling, add in water and stir well. 8. Add salt as needed, then stir well. 9. Add in Rich's Double Cream and stir well. 10. Once boiling, it's ready to serve.
